Ingredients
For the chicken:
- 1/4 cup taco seasoning
- 1 tablespoon olive oil
- 1 lime, juiced
- 2 chicken breasts, boneless and skinless
- 1 red onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
For the bowl:
- 2 cups brown rice, cooked
- 1 (13.5-ounce) can of black beans
- 2 cups guacamole
- sour cream, to taste
- cilantro, to taste
- pico de gallo, to taste
Directions
Step 1 –In a large bowl, combine the taco seasoning, olive oil, and lime juice.
Step 2 –Toss the chicken, red onion, red bell pepper, green bell pepper, and yellow bell pepper in the marinade.
Step 3 –Cover and let marinate for 1 hour.
Step 4 –Preheat the oven to 375 degrees F.
Step 5 –Spread the marinated chicken and vegetables out on a sheet pan.
Step 6 –Roast until the meat is cooked through at 165 degrees F internally, about 15 minutes. You can roast for 3 minutes longer for a char.
Step 7 –In a bowl, spread out the rice.
Step 8 –Top with the marinated chicken and vegetables, black beans, guacamole, sour cream, cilantro, and pico de gallo.
Step 9 –Serve.
