Ingredients
- 3 tablespoons vegetable oil
- 6 (6-ounce) chicken breast halves, boneless and skinless, thinly sliced
- 1/2 cup onions, sliced
- 1/2 cup red bell pepper, sliced
- 1/2 cup tomato juice
- 2 tablespoons taco seasoning mix
- 1 cup salsa
- 8 slices French bread, sliced 1/2-inch-thick
- 2 cups cheddar cheese, shredded

Directions
Step 1 –Set the oven rack about 6 inches from the heat source and preheat the broiler.
Step 2 –In a large skillet over medium-high heat, add the oil.
Step 3 –Add the chicken slices to the oil and cook, while stirring, until they reach an internal temperature of 165 degrees F and are lightly browned, about 5 minutes.
Step 4 –Stir the onions and the red peppers into the chicken slices and cook, while stirring, until the vegetables are tender, about 5 minutes.
Step 5 –Stir the tomato juice and the taco seasoning into the chicken mixture and mix well.
Step 6 –Cook the chicken mixture until the juice has thickened and the meat is well-coated with the sauce, about 7 minutes.
Step 7 –Spread 2 tablespoons of the salsa over each of the French bread slices.
Step 8 –Evenly spoon 1/8 of the chicken mixture on top of the salsa layers and then sprinkle each of the slices with 1/4 cup of the cheese.
Step 9 –Place the melties on a baking sheet and cook until the cheese has melted and is beginning to brown, about 5 minutes.
Step 10 –Serve.
