Ingredients
- 3 tablespoons butter, softened, plus 4 tablespoons, melted, divided
- 1 teaspoon garlic, minced
- 3 tablespoons flour
- 1 cup milk
- 1 cup chicken broth
- 8 ounces plain Greek yogurt or sour cream
- 4 ounces cream cheese
- salt, to taste
- 1/2 teaspoon black pepper
- 3 chicken breasts, boneless and skinless, cooked and shredded
- 1 tablespoon poppy seeds
- 1/2 cup parmesan cheese, shredded
- 2/3 cup buttery round crackers, crushed
- parsley, optional, to taste, chopped, for garnish
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –Grease a 9×13-inch casserole dish.
Step 3 –In a large saucepan over medium heat, melt 3 tablespoons of the butter.
Step 4 –Add the garlic and sauté until fragrant, about 1 minute.
Step 5 –Add the flour and stir until the mixture clumps together, about 1-2 minutes.
Step 6 –Gradually whisk the milk into the flour mixture.
Step 7 –Add the chicken broth, the Greek yogurt, the cream cheese, the salt, and the pepper to the saucepan and simmer while stirring until the cream cheese is melted.
Step 8 –Add the chicken and the poppy seeds to the sauce mixture and stir to combine.
Step 9 –Transfer the chicken mixture to the prepared casserole dish.
Step 10 –Sprinkle the top of the casserole with the parmesan and the cracker crumbs.
Step 11 –Drizzle the remaining melted butter over the cracker crumbs.
Step 12 –Bake until heated through, about 15 minutes.
Step 13 –Serve garnished with the parsley.
