Ingredients
- 1 cup sour cream
- 1 cup half-and-half cream
- 1 cup onion, chopped
- 2 (4-ounce) cans of chopped green chiles
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 (2-pound) package of frozen, shredded hash brown potatoes
- 2 1/2 cups chicken, cubed, cooked
- 2 1/2 cups cheddar cheese, shredded, divided
- fresh cilantro, optional, chopped
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Grease a 13×9-inch baking dish.
Step 3 –In a large bowl, combine the sour cream, half-and-half, onion, chiles, salt, and pepper.
Step 4 –Stir in the potatoes, chicken, and 2 cups of cheese.
Step 5 –Pour the mixture into the prepared baking dish.
Step 6 –Bake, uncovered, until golden brown, about 1 hour 15 minutes.
Step 7 –Sprinkle with the remaining cheese and cilantro.
Step 8 –Serve.
