Ingredients

  • 2 tablespoons unsalted butter
  • 3/4 cup onion, chopped
  • 1/3 cup celery, chopped
  • 1/3 cup carrots, chopped
  • 1 clove garlic, minced
  • 2 1/2 cups leftover turkey
  • 1/4 cup green beans
  • 1/4 cup corn
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1 cup gravy
  • 2 cups mashed potatoes
  • 4 ounces cheddar cheese, shredded, divided in half

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In a large skillet over medium heat on the stove-top, melt the butter.

Step 3 –Once the butter melts, add the onion, celery, and carrots, cooking until the onions are translucent, for about 3 minutes.

Step 4 –Add the minced garlic and cook until fragrant, for about 1 minute.

Step 5 –Add the turkey, green beans, corn, salt, pepper, thyme, basil, and gravy. Cook until heated through.

Step 6 –Transfer the mixture to a 1-quart baking dish, pressing it into an even layer.

Step 7 –Heat the mashed potatoes until lukewarm.

Step 8 –Stir half of the shredded cheese into the mashed potatoes until combined.

Step 9 –Spread the mashed potatoes over the top of the turkey mixture.

Step 10 –Sprinkle the top with the remaining cheese.

Step 11 –Bake until the top is lightly browned, for about 30 minutes.

Step 12 –Serve warm!
