Ingredients
- 1 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/2 teaspoon salt
- 5 large eggs, yolks and whites separated
- 1 cup butter, unsalted
- 1 cup sugar, granulated
- 1 teaspoon vanilla extract
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Spray a loaf pan generously with cooking spray.
Step 3 –Mix the flour, cocoa powder, and salt together in a bowl.
Step 4 –In a separate bowl, whisk the egg whites until stiff peaks form.
Step 5 –In another bowl mix the butter with the sugar until well combined and creamy.
Step 6 –Mix in the egg yolks and vanilla until well combined.
Step 7 –Add half the dry ingredient mixture and half the egg whites, folding until combined.
Step 8 –Add the remaining flour mixture and mix well. Fold in the remaining egg whites with a spatula. Do not over-mix!
Step 9 –Transfer the batter to the prepared loaf pan and bake until a toothpick inserted into the center comes out clean, about 1 hour.
Step 10 –Let the cake cool in the loaf pan for about 15 minutes.
Step 11 –Run a knife around the sides of the loaf pan to loosen the cake in case it’s stuck and turn it over onto a cooling rack.
Step 12 –Turn it upright and allow it to cool completely before slicing.
Step 13 –Serve.
