Ingredients
- 2 tablespoons butter, divided
- 6 loin pork chops, boneless
- 2 small onions, chopped
- 1 (10.75-ounce) can cream of mushroom soup
- 1 1/4 cups milk
- 4 cups potatoes, very thinly sliced
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Butter or spray a 2-quart baking dish.
Step 3 –Heat a large skillet over medium-high heat and melt 1 tablespoon of the butter in the pan.
Step 4 –Add the pork chops to the melted butter and brown on both sides, about 3 minutes per side. Transfer the pork chops to a plate.
Step 5 –Add the remaining butter to the skillet and melt.
Step 6 –Add the onion to the butter and cook until it is soft, about 5 minutes.
Step 7 –Add the cream of mushroom soup and the milk to the onion and stir until they are combined and no lumps remain.
Step 8 –Place the potato slices in an even layer in the prepared baking dish.
Step 9 –Place the pork chops on top of the potato layer.
Step 10 –Evenly pour the soup mixture over the pork chops.
Step 11 –Cover the baking dish and bake for 30 minutes.
Step 12 –Remove the cover and cook until the pork is cooked through and has reached an internal temperature of at least 145 degrees F and the top is golden brown, about 30-40 minutes.
Step 13 –Serve.
