  • 1 large red bell pepper, diced
  • 1/2 red onion, diced
  • 1/2 English cucumber, diced

  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar

  • 1/4 teaspoon onion powder
  • 3/4 teaspoon kosher salt, plus more, to taste

Directions

Step 1 –Place the red bell pepper, the red onion, the English cucumber, the broccoli, the cauliflower, the green onions, and the feta cheese in a large bowl.

Step 2 –Toss the vegetables with the olive oil, the red wine vinegar, the Dijon mustard, the garlic powder, the onion powder, the salt, and the black pepper.

Step 3 –Taste for seasoning and add the extra salt as desired.
