Ingredients

  • 2 2/3 cups all-purpose flour
  • 1 tablespoon corn starch
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1 1/2 cups circus animal cookies, chopped, plus more, to taste, divided
  • 2 tablespoons rainbow nonpareils, plus more, to taste, divided

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line a 9×9-inch pan with parchment paper.

Step 3 –In a medium bowl, whisk the flour, the corn starch, the salt, and the baking soda together.

Step 4 –In another bowl, cream the butter and the sugar with an electric hand mixture on medium speed until light and fluffy.

Step 5 –Mix the vanilla and the eggs, one at a time, into the butter mixture.

Step 6 –Add the flour mixture to the butter mixture, a little at a time, until combined.

Step 7 –Fold 1 1/2 cups of the animal cookies and 2 tablespoons of the nonpareils into the batter.

Step 8 –Gently press the dough into the prepared baking pan and top with the extra animal cookies and the extra nonpareils.

Step 9 –Bake the blondies until they are just set, about 25-30 minutes.

Step 10 –Allow the blondies to cool completely, then slice.

Step 11 –Serve.
