Ingredients
- 1 (13.5 ounce) can coconut milk
- 1 1/2 cups coconut water or water
- salt, to taste
- 2 cups jasmine rice
Directions
Step 1 –In a medium non-stick saucepan over medium-high heat, bring the coconut milk and coconut water to a boil.
Step 2 –Season the mixture with salt.
Step 3 –Add the rice and lower the heat to bring the mixture to a simmer.
Step 4 –Simmer the rice uncovered until the liquid has been absorbed, about 17-20 minutes.
Step 5 –Remove from the heat and let the rice rest, covered, for about 15 minutes.
Step 6 –Fluff with a fork and serve.
