Coffee Break Cake

Most people think their lunch break is the best part of their day… but for us, it’s our coffee break, for sure. Nothing beats kicking up our feet with a nice, steamy brew in hand. It’s just so relaxing no matter how busy our day has been. But guess what?! We found another treat that makes this time even sweeter… this Coffee Break Cake! The moist, cinnamon bake creates the perfect sugary blend that tastes so yummy with a slurp of that tall, dark, and handsome cup of joe. Sure, you don’t have to eat Coffee Break Cake on your coffee break, or even with a cup of coffee in hand. We’re just saying we’ve found that time to be when it all tastes the best!

Ingredients

  • 2 cups flour
  • 3/4 cup plus 2 tablespoons sugar, divided
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup vegetable shortening
  • 1 teaspoon cinnamon
  • 1 large egg, beaten
  • 3/4 cup milk
  • 2 tablespoons butter, melted
  • whipped topping, optional, to taste, for serving

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease an 8-inch square baking pan.

Step 3 –In a medium bowl, combine the flour, 3/4 cup of the sugar, the baking powder, and the salt.

Step 4 –Use a pastry cutter or two knives to cut the shortening into the flour mixture until it resembles coarse crumbs.

Step 5 –Put 1/2 cup of the flour mixture in a small bowl and stir in the remaining sugar and the cinnamon.

Step 6 –Stir the egg and the milk into the remaining flour mixture.

Step 7 –Spoon the batter into the prepared pan and smooth the surface.

Step 8 –Pour the melted butter over the top of the batter and evenly sprinkle it with the cinnamon mixture.

Step 9 –Bake the cake until a toothpick inserted into the center comes out clean, about 35 minutes.

Step 10 –Slice and serve with a dollop of the whipped topping.
