Ingredients
- 2 tablespoons olive oil
- 1 pound chicken breasts, boneless and skinless, cubed
- 4 medium potatoes, peeled and cut into 1/4-inch cubes
- 1 medium sweet red pepper, chopped
- 2 cloves garlic, minced
- 1 (26-ounce) jar spaghetti sauce, meatless
- 1 3/4 cups frozen cut green beans
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon crushed red pepper flakes
- black pepper, to taste
Directions
Step 1 –In a Dutch oven over medium-high heat, heat the olive oil.
Step 2 –Add the chicken, the potatoes, the sweet red pepper, and the garlic to the olive oil and cook until the chicken reaches an internal temperature of 165 degrees F and the vegetables are tender.
Step 3 –Add the spaghetti sauce, the green beans, the basil, the salt, the red pepper flakes, and the black pepper to the chicken mixture and stir to combine.
