Ingredients

  • 1 (12-ounce) bag frozen sweet yellow corn, defrosted and drained
  • 2 medium-sized jalapeños, seeded and chopped
  • 1/2 red onion, finely chopped
  • 3/4 cup fresh cilantro, torn or chopped
  • 2 limes, juiced
  • 1/2 teaspoon salt, plus more, to taste
  • 1/2 teaspoon pepper, plus more, to taste

Directions

Step 1 –In a bowl, combine the corn, the jalapeños, the red onion, the cilantro, the lime juice, 1/2 teaspoon of the salt, and 1/2 teaspoon of the pepper.

Step 2 –Taste for seasoning, adding the extra salt and the extra pepper as needed.

Step 3 –Serve.
