Ingredients

For the burritos:

  • 2 large russet potatoes, peeled and grated
  • 1 pound ground breakfast sausage
  • 6 eggs, beaten
  • 1 teaspoon salt, divided
  • 1/2 teaspoon ground pepper, divided
  • 2 tablespoons olive oil
  • 1 bunch green onions, white and green parts, chopped
  • 6 large flour tortillas
  • 2 cups cheddar cheese, grated
  • 2 avocados, sliced
  • salsa, to taste, store-bought or homemade
  • fresh cilantro, to taste, chopped

Directions

Step 1 –In a cheesecloth, add the grated potatoes.

Step 2 –Draw up the corners of the cheesecloth and, twisting tightly, squeeze out as much of the water as possible. This is essential to making the potatoes crispy.

Step 3 –In a large skillet over medium heat, add the ground sausage and cook, while crumbling, until it is no longer pink, about 5-7 minutes.

Step 4 –Transfer the cooked sausage to a clean plate, reserving the drippings in the skillet.

Step 5 –In the same skillet over medium-low heat, add the eggs, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper and, using a rubber spatula, cook the eggs, while stirring them slowly but frequently, until cooked through and fluffy, about 3-5 minutes.

Step 6 –Transfer the eggs to the plate with the sausage.

Step 7 –In the same skillet over medium-high heat, add the olive oil.

Step 8 –Add the potatoes to the hot oil and spread them out evenly.

Step 9 –Season the potatoes with the remaining salt and the remaining pepper.

Step 10 –Cook the potatoes, while stirring them every 2-3 minutes, until they are slightly crispy and cooked through, about 6-8 minutes.

Step 11 –Add the green onions, the sausage, and the eggs to the potato mixture and stir until combined.

Step 12 –Transfer the skillet from the heat.

Step 13 –Preheat the oven to a low broil.

Step 14 –Working with 1 tortilla at a time, place about 1/2-3/4 cup of the sausage mixture in the middle.

Step 15 –Top the sausage mixture in the tortilla with 1/3 cup of the cheese, 1/4 of the sliced avocados, the salsa, and the cilantro.

Step 16 –Roll the tortilla into a burrito, tucking in the corners.

Step 17 –Repeat with the remaining tortillas and the remaining filling ingredients.

Step 18 –Line the burritos on a baking sheet.

Step 19 –Broil the burritos until just golden, about 1-3 minutes.

Step 20 –Serve the burritos hot, topped with the remaining avocado, the remaining salsa, and the remaining cilantro.
