Ingredients
For the chicken and the veggies:
- 2 teaspoons paprika
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/4 teaspoon cayenne pepper
- 2 (1.5-pound) chicken breasts, bone-in and skin-on, skin removed and halved
- 1/2 pound baby portobello mushrooms, quartered
- 1 medium red bell pepper, chopped
- 1 medium onion, chopped
- 1 (14-ounce) can water-packed artichoke hearts, rinsed and drained
- 1 1/2 cups chardonnay
- 1 (6-ounce) can tomato paste
- 3 cloves garlic, minced
- 2 tablespoons fresh thyme, minced, or 2 teaspoons dried thyme
For serving:
- fettuccine noodles, to taste, cooked and warm
- 1/4 cup fresh parsley, minced
- Romano cheese, to taste, grated
Directions
Step 1 -In a small bowl, add the paprika, the salt, the pepper, and the cayenne and mix to combine.
Step 2 -Sprinkle the seasoning mixture evenly over the chicken halves.
Step 3 -In a 5-quart slow cooker, place the seasoned chicken halves, the mushrooms, the red bell peppers, the onions, and the artichokes.
Step 4 -In a second small bowl, add the chardonnay, the tomato paste, the garlic, and the thyme and mix to combine.
Step 5 -Pour the sauce over the vegetables.
Step 6 -Cover the slow cooker and cook the chicken and the veggies on low heat until the meat reaches an internal temperature of 165 degrees F and is tender, about 5-6 hours.
Step 7 -Add the fettuccine to the serving plates and top with the chicken and the veggies.
Step 8 -Garnish the chicken and the veggies with the parsley and the cheese and serve.
