Ingredients
- 3 pounds yellow squash, chopped
- 5 tablespoons butter or margarine, divided
- 1 small onion, chopped
- 1 cup sharp cheddar cheese, shredded
- 2 large eggs, lightly beaten
- 1/4 cup mayonnaise
- 2 teaspoons sugar
- 1 teaspoon salt
- 20 round buttery crackers, crushed
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Grease an 11×7-inch baking dish.
Step 3 –Bring the water to a boil and cook until the squash is just tender, about 10 minutes.
Step 4 –Drain the water from the squash well and gently press them between paper towels.
Step 5 –In a large skillet over medium-high heat, melt 4 tablespoons of the butter.
Step 6 –Add the onion to the butter and sauté until it is tender, about 5 minutes.
Step 7 –Transfer the onion from the heat and stir in the squash, the cheese, the eggs, the mayonnaise, the sugar, and the salt.
Step 8 –Pour the squash mixture into the prepared baking dish.
Step 9 –In a microwave safe bowl, melt the remaining butter.
Step 10 –Stir the melted butter with the crackers.
Step 11 –Sprinkle the cracker mixture over the top of the casserole.
