Ingredients
- 1 pound ground beef, can substitute with ground pork, ground chicken, or ground turkey
- 1 tablespoon garlic paste
- 1 teaspoon ginger paste
- 1 (16-ounce) bag coleslaw mix
- 1 baby bok choy, chopped
- 1/2 cup matchstick carrots
- 1/3 cup reduced-sodium soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 2 green onions, chopped
- salt, to taste
- pepper, to taste
- sriracha, optional, to taste, for serving
- sesame seeds, optional, to taste, for serving

Directions
Step 1 –Add the ground beef to a large, deep skillet and brown over medium heat, while crumbling, until no pink remains, about 5-7 minutes.
Step 2 –Drain any excess grease from the skillet.
Step 3 –Lower the heat to medium-low.
Step 4 –Add the garlic paste and the ginger paste and cook while stirring, until fragrant, about 1 minute.
Step 5 –Add the coleslaw mix, the bok choy, the carrots, the soy sauce, the hoisin sauce, the sesame oil, and the rice vinegar and stir to combine.
Step 6 –Cook over medium-low heat until the coleslaw mix is soft, about 10-15 minutes.
Step 7 –Top with the green onions and season with the salt and the pepper.
Step 8 –Transfer the mixture to four serving bowls.
Step 9 –Drizzle with the sriracha and sprinkle with the sesame seeds.
Step 10 –Serve.
