Crack Chicken Casserole is a layered tasting experience — layers upon layer of deep, savory chicken flavor. But Crack Chicken Casserole also bursts with sharp cheddar and bright carrots and peppers, all of which accent and enhance the chicken taste. You can transform a rotisserie chicken into a complete meal in one fell swoop and make it even more delicious with this dish.
Ingredients
- 1 (7-ounce) box chicken-flavored rice and pasta mix
- 1 cup carrots, thinly sliced
- 1/2 cup green pepper, chopped
- 1/2 cup onion, finely diced
- 1 (10.5-ounce) can cream of chicken soup
- 1 cup sour cream
- 2 cups chicken breast, cooked and chopped
- 1/2 teaspoon black pepper
- 1/2 cup sharp cheddar cheese, shredded
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Coat a 9×13-inch baking dish with nonstick cooking spray.
Step 3 –Cook the boxed rice according to the package instructions.
Step 4 –During the last 5 minutes of cooking time, add in the green peppers, the carrots, and the onions.
Step 5 –Add the cream of chicken soup and the sour cream and stir to combine.
Step 6 –Add the chicken pieces and the black pepper, stirring to combine.
Step 7 –Transfer the pan from the heat.
Step 8 –Add the chicken mixture to the prepared baking dish.
Step 9 –Sprinkle the cheese over the top of the chicken rice mixture.
Step 10 –Bake for 30 minutes.
Step 11 –Serve immediately.
