Ingredients
- 1 tablespoon shortening
- 4 (1-inch-thick) pork chops
- 1/4 cup onion, chopped
- 1/8 teaspoon poultry seasoning
- salt, to taste
- pepper, to taste
- 1 cup chicken broth
- 1 1/2 cups fresh cranberries
- 1 apple, peeled and cored, diced
- 1/2 cup sugar
- 1/4 cup water
- 2 tablespoons pecans, optional, coarsely chopped
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –In a heavy skillet over medium heat, add the shortening.
Step 3 –Brown the pork chops in the shortening on both sides.
Step 4 –Place the chops in a shallow baking dish.
Step 5 –Sprinkle the pork with the onion, the poultry seasoning, the salt, and the pepper.
Step 6 –Pour the chicken broth over the chops.
Step 7 –Cover the pan tightly with foil and bake for 30 minutes.
Step 8 –While the pork is roasting, combine the cranberries, the apples, the sugar, the water, and the pecans in a medium bowl.
Step 9 –Remove the pork chops from the oven and spoon the cranberry mixture over them.
Step 10 –Cover the pork once again with the foil and bake until it is tender and the chops read 145 degrees F with a meat thermometer inserted into the thickest part.
