Ingredients
- 1 tablespoon olive oil
- 1 cup celery, chopped
- 1 cup onion, chopped
- 1 cup carrot, peeled and sliced
- 4 cloves garlic, minced
- 8 cups chicken stock
- 1 (1 pound) box Orzo
- 2-3 cups chicken, cooked and shredded
- 1 tablespoon parsley, minced
- 1 teaspoon salt
- 1/4 teaspoon pepper
Directions
Step 1 –Heat the olive oil in a large pot on the stove-top over medium heat.
Step 2 –Add the celery, onion, and carrots to the pot and cook until the onion turns translucent, about 7 minutes.
Step 3 –Add in the garlic and sauté until aromatic but not burning, about 2 minutes.
Step 4 –Add in the chicken stock and bring the mixture to a boil.
Step 5 –Add in the orzo and the cooked, shredded chicken breast.
Step 6 –Lower the heat to medium.
Step 7 –Add in the parsley, salt, and pepper.
Step 8 –Simmer until the vegetables are tender and the orzo is fully cooked through, having absorbed most of the liquid, about 20 minutes.
Step 9 –Serve warm!
