Ingredients
- 4 pork chops
- salt, to taste
- pepper, to taste
- 1 tablespoon olive oil
- 2 tablespoons butter, divided
- 1 whole head garlic, cloves peeled
- 1 tablespoon flour
- 1/2 cup chicken broth
- 1/2 teaspoon lemon juice
- 1/4 teaspoon garlic powder
- 3/4 cup heavy whipping cream
- fresh parsley, to taste, optional, chopped
- pasta, cooked, optional, for serving
Directions
Step 1 –Let the pork chops sit outside of the fridge and at room temperature for at least 15 minutes.
Step 2 –Season the chops with salt and pepper on both sides.
Step 3 –In a deep skillet, add the olive oil and 1 tablespoon of butter over medium-high heat.
Step 4 –Let the butter melt in the skillet and then add the pork chops.
Step 5 –Cook the pork until golden, about 3-5 minutes per side.
Step 6 –Transfer the pork to a plate.
Step 7 –Add the remaining 1 tablespoon of butter and the garlic cloves to the skillet.
Step 8 –Turn the heat down to medium.
Step 9 –Cook, stirring often, until the garlic has browned on the outside, about 3 minutes.
Step 10 –Push the garlic to one side of the skillet and add the flour to the other.
Step 11 –Cook the flour until it is incorporated with the butter, about 30 seconds.
Step 12 –Add the chicken broth and lemon juice, stirring and letting it cook until thickened, about 1 minute.
Step 13 –Add in the garlic powder and cream, stirring or whisking until the garlic powder dissolves.
Step 14 –Return the pork to the skillet and cook until the sauce thickens and the pork is cooked to 145 degrees F.
Step 15 –Taste the sauce and season to taste.
Step 16 –Serve garnished with parsley and with pasta.
