Ingredients

For the pasta:

1 (16-ounce) box pasta, such as elbows

For the poppy seed dressing:

  • 2/3 cup Greek yogurt
  • 1/4 cup apple cider vinegar
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground dry mustard
  • 1 tablespoon poppy seeds

For the pasta salad:

  • 5 cups romaine lettuce, chopped
  • 1 pound strawberries, sliced
  • 2 avocados, diced
  • 3/4 cup feta cheese, crumbled
  • 3/4 cup almonds, sliced

Directions

Step 1 –In a large pot of salted, boiling water, add the pasta and cook it to al dente, according to the package directions.

Step 2 –Drain the pasta and allow it to cool for 5 minutes.

Step 3 –In a bowl, add the yogurt, the apple cider vinegar, the olive oil, the honey, the salt, the ground mustard, and the poppy seeds and whisk to combine.

Step 4 –In a large serving bowl, add the lettuce, the strawberries, the avocados, the feta, the almonds, and the cooled pasta and stir to combine.

Step 5 –Add the dressing to the salad and toss to combine.

Step 6 –Serve.
