Ingredients
- 1-2 quarts extra-virgin olive oil, canola oil, or vegetable oil, for frying
- 3 pounds artichokes, dark green leaves removed, light green leaves trimmed in half, base and stem trimmed
- kosher salt, to taste
- 1 lemon, cut into wedges
Directions
Step 1 –In a large saucepan, heat 2-3 inches of the oil to 280 degrees F.
Step 2 –Add the artichokes to the oil and gently cook in a steady stream of bubbles, until they are tender and easily pierced with a fork, about 10-15 minutes. Turn the larger artichokes frequently for even cooking.
Step 3 –Use a slotted spoon to transfer the artichokes to a paper-towel-lined plate and let them stand until they are cool enough to handle.
Step 4 –Use your hands to gently pull open the artichoke buds so they resemble an open flower. If using the large artichokes, remove and discard the hairy “choke” in the center.
Step 5 –Increase the oil temperature to 350 degrees F.
Step 6 –Transfer the artichokes back to the oil to fry until they are browned and crisp, about 2-5 minutes.
Step 7 –Use a slotted spoon to transfer the artichokes to a paper-towel-lined plate to drain.
Step 8 –Season the artichokes with the salt.
Step 9 –Serve the bites with the lemon wedges.
