Ingredients
- 1/2 cup butter, softened
- 1 cup white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 2 cups crisp rice cereal
- 1 cup butterscotch chips
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Spray a cookie sheet with cooking spray and set it aside.
Step 3 –In a large bowl, add the butter and the sugar and cream until light and fluffy.
Step 4 –Add the egg and the vanilla to the butter mixture and beat until well-blended.
Step 5 –Add the flour, the salt, and the baking soda to the butter mixture and mix well.
Step 6 –Stir the rice cereal and the butterscotch chips into the butter mixture until incorporated.
Step 7 –Drop the cookie dough by heaping tablespoons onto the prepared cookie sheet.
Step 8 –Bake the cookies until lightly browned, about 12-15 minutes.
Step 9 –Transfer the cookies to cooling racks.
Step 10 –Serve.
