Ingredients
- 2 (12.5-ounce) cans of white premium chunk chicken breast
- 1 egg
- 1 teaspoon dijon mustard
- 1/4 teaspoon salt, plus more to taste
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/8 teaspoon dried thyme
- 1 1/4 cup plain dried bread crumbs, divided
- vegetable oil, for pan-frying
Directions
Step 1 –Drain the chicken well.
Step 2 –Roughly chop the chicken. A consistent size will ensure consistent texture in the final product.
Step 3 –Add the chopped chicken, egg, dijon mustard, salt, garlic powder, onion powder, black pepper, and dried thyme.
Step 4 –Stir in 1/4 cup of bread crumbs.
Step 5 –Pour the remaining bread crumbs into a shallow bowl.
Step 6 –Portion the chicken mixture into six fritters.
Step 7 –Coat the fritters on both sides with the bread crumbs.
Step 8 –Heat about 1/4 inch of the vegetable oil in a large skillet over medium to medium-high heat.
Step 9 –When the oil is hot, pan-fry the fritter on each side until golden brown and crispy, about 4-5 minutes per side.
Step 10 –Serve.
