  • 2/3 cup olive oil
  • 1/4 cup lemon juice
  • 1 1/2 teaspoons Dijon mustard
  • 1 teaspoon honey
  • salt, to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon garlic, minced
  • 1/2 pound kale, thick ribs discarded, rinsed and dried, cut into thin slices
  • 1 cup unsalted almonds, toasted and slivered
  • 3/4 cup parmesan cheese, finely grated
  • 1 1/2 cups grape tomatoes, halved
  • 1 cup croutons, store-bought or homemade, for garnish
  • lemon slices, to taste, for garnish


Step 1 –In a small bowl, add the olive oil, the lemon juice, the Dijon mustard, the honey, the salt, the black pepper, and the garlic and whisk to combine.

Step 2 –Place the dressing in the refrigerator and chill until ready to serve.

Step 3 –In a large bowl, add the kale, the almonds, the parmesan cheese, and the tomatoes.
