Ingredients

  • 6 strips center-cut bacon
  • 1 cup Gruyère cheese, grated
  • 6 large eggs
  • 2/3 cup 2% milk
  • 1/4 cup half-and-half
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • nutmeg, to taste, grated
  • 2 tablespoons chives, chopped

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Spray a pie dish with cooking spray.

Step 3 –Heat a large frying pan over medium heat.

Step 4 –Arrange the bacon strips in a single layer along the bottom of the pan and cook, turning the strips over occasionally, until they are nicely browned.

Step 5 –Transfer the cooked bacon strips to a paper-towel-lined plate to cool.

Step 6 –Chop the cooked bacon strips crosswise into 1/4-inch pieces.

Step 7 –Sprinkle the chopped bacon into the prepared pie dish and top with the Gruyère cheese.

Step 8 –In a medium bowl, whisk the eggs, the milk, the half-and-half, the salt, the black pepper, and the nutmeg together.

Step 9 –Pour the milk mixture over the cheese layer.

Step 10 –Sprinkle the chives over the top of the egg mixture.

Step 11 –Bake the quiche until the center is set, about 35 minutes.

Step 12 –Slice and serve.
