Ingredients
- 4 pork chops, bone-in or boneless
- 1/4 cup olive oil
- 1 1/2 tablespoons brown sugar
- 2 teaspoons Dijon mustard
- 1 1/2 tablespoons soy sauce
- 1 teaspoon lemon zest
- 2 teaspoons parsley leaves, chopped, plus more, to taste, for garnish
- 2 teaspoons thyme leaves, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic, minced
- couscous or rice, optional, to taste, cooked and warm, for serving
Directions
Step 1 –Place the pork chops in a bowl or in a resealable gallon-sized plastic bag.
Step 2 –In a medium-sized bowl, whisk together the olive oil, the brown sugar, the Dijon mustard, the soy sauce, the lemon zest, 2 teaspoons of the parsley, the thyme, the salt, the pepper, and the garlic.
Step 3 –Pour the marinade over the pork, flipping the chops in the bowl or massaging the bag to make sure everything is well-coated.
Step 4 –Allow the pork to marinate for at least 1 hour and up to 8 hours.
Step 5 –Preheat the grill to medium heat.
Step 6 –Place the pork on the grill and cook until each chop reaches 145 degrees F internally, about 6-8 minutes.
Step 7 –Let the pork rest away from the heat for 5 minutes.
Step 8 –Garnish with the extra parsley and serve with the warm couscous.
