  • 2 pounds carrots, peeled and cut on the diagonal every 2 inches
  • 2 tablespoons olive oil
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried rosemary
  • 3/4 teaspoon dried oregano
  • 3/4 teaspoon dried thyme
  • 3/4 teaspoon dried sage
  • 1/8 teaspoon ground nutmeg
  • 2 cloves garlic, minced


Step 1 –Preheat the oven to 430 degrees F.

Step 2 –Drizzle the carrots with the olive oil and sprinkle with the salt, the pepper, the rosemary, the oregano, the thyme, the sage, and the nutmeg and toss to coat.

Step 3 –Arrange the seasoned carrots on a baking sheet, leaving space around each one so that they don’t overlap.

Step 4 –Roast the carrots for 20 minutes.

Step 5 –Add the minced garlic to the carrots and toss to coat.

Step 6 –Spread the carrots out, then roast again until tender, about 10-13 minutes.

Step 7 –Serve.
