Step 2 –Place the almonds in a food processor and process until tiny bits are formed. Set it aside.

Step 3 –In a bowl, add the flour and the salt and whisk to combine.

Step 4 –In the bowl of a stand mixer fitted with the paddle attachment, add the butter and 1/2 cup of the confectioners’ sugar until it is just blended and slightly creamy.

Step 5 –Add the vanilla to the butter mixture and mix to combine.

Step 6 –Reduce the mixer speed to low and slowly add the flour mixture to the butter mixture until it is just combined.

Step 7 –Add the chocolate chips and the processed almonds to the cookie dough and mix until they are evenly distributed, folding with a spatula as needed.

Step 8 –Scoop the dough into balls that equal about 1 tablespoon and place them on an ungreased cookie sheet, fitting about 16 per sheet and evenly spacing them apart.

Step 9 –Bake the cookies until the bottoms are lightly golden-brown, about 12 minutes.

Step 10 –Let the cookies rest on the baking sheet until they are cool enough to handle.

Step 11 –Pour the remaining confectioners’ sugar in a small mixing bowl.

Step 12 –Dip and roll the baked cookies in the confectioners’ sugar to lightly coat them, then transfer them to a wire rack to cool completely. Repeat the baking and coating processes until all of the cookie dough has been used.

Step 13 –Roll the cooled cookies in the powdered sugar a second time, giving them a thicker coating.

Step 14 –Serve.
