Ingredients

  • 3 cups all-purpose flour
  • 1 1/2 cups sugar, divided
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1 cup shortening
  • 2 large eggs, room temperature and lightly beaten
  • 1 teaspoon almond extract
  • 1 tablespoon cornstarch
  • 4 cups fresh or frozen raspberries

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –In a large bowl, combine the flour, 1 cup of the sugar, the baking powder, the salt, and the cinnamon.

Step 4 –Cut the shortening into the flour mixture until it resembles coarse crumbs.

Step 5 –Stir the eggs and the almond extract into the flour mixture.

Step 6 –Press 2/3 of the crumb mixture into the bottom of the prepared baking dish.

Step 7 –In a large bowl, combine the cornstarch and the remaining sugar.

Step 8 –Add the raspberries to the sugar mixture and gently toss to coat.

Step 9 –Spoon the coated raspberries over the crumb mixture and then sprinkle with the remaining crumb mixture.

Step 10 –Bake the raspberry mixture until it is bubbly and golden-brown, about 35-45 minutes.

Step 11 –Transfer the crumb bars to a wire rack to cool.

Step 12 –Cut the crumb bars into squares.

Step 13 –Serve.
