Ingredients
- 3/4 cup sugar
- 6 tablespoons all-purpose flour
- 1 cup mild cheddar cheese, shredded
- 1 cup Colby-Jack cheese, shredded
- 2 (20-ounce) cans pineapple chunks, drained and juices reserved
- 40 butter crackers, crushed
- 8 tablespoons unsalted butter, melted
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Coat a 9×13-inch casserole dish with cooking spray.
Step 3 –In a large bowl, combine the sugar and the flour.
Step 4 –Gradually stir the cheddar cheese and the Colby-Jack cheese into the sugar mixture.
Step 5 –Add the pineapple chunks to the sugar mixture and stir until evenly combined.
Step 6 –Pour the sugar mixture into the prepared casserole dish.
Step 7 –In a medium bowl, combine the cracker crumbs, the butter, and 6 tablespoons of the reserved pineapple juice and stir until evenly blended.
Step 8 –Spread the cracker mixture over the top of the pineapple mixture.
Step 9 –Bake the casserole until light golden-brown, about 25-30 minutes.
Step 10 –Serve.
