Dreamy Gratin is a hearty and wholesome take on a vegetable dish, taking the winter sweetness of butternut squash and transforming it into a tender and flavorful main course. Starting from the top with toasty breadcrumbs and mixed throughout with sharp parmesan cheese and fragrant garlic, Dreamy Gratin is exactly the meal you hope will come out steaming hot from your oven. Ingredients
- 1/2 cup 2% reduced-fat milk
- 2 cloves garlic, minced
- 1 small shallot, minced
- 1 tablespoon fresh thyme, chopped
- 1/3 cup fresh parmesan cheese, grated and divided
- 3/4 teaspoon kosher salt, divided
- ground black pepper, to taste
- 2 pounds butternut squash, peeled and cut into 1/4-inch-thick slices
- 2 tablespoons unsalted butter, melted
- 1/2 cup whole wheat or gluten-free panko
Directions
Step 1 –Preheat the oven to 400 degrees F.
Step 2 –Spray a medium oven-safe casserole dish with cooking spray.
Step 3 –In a large bowl, combine the milk, the garlic, the shallot, the thyme, 1/2 of the parmesan, 1/2 of the salt, and the pepper.
Step 4 –Add the squash to the milk mixture and toss to coat.
Step 5 –Transfer the squash mixture into the prepared baking dish.
Step 6 –In a large bowl, add the melted butter, the breadcrumbs, the remaining parmesan, the remaining salt, and the pepper.
Step 7 –Evenly sprinkle the breadcrumb mixture over the squash mixture and cover with foil.
Step 8 –Bake until warmed through, about 45 minutes.
Step 9 –Carefully uncover the gratin and broil until brown on top, about 2-3 minutes.
Step 10 –Serve.
