Ingredients

  • 12 squares low-fat honey graham crackers, finely crushed
  • 1/4 cup butter, melted
  • 1 teaspoon sugar
  • 1 (0.3-ounce) package sugar-free low-calorie lime-flavored gelatin
  • 3/4 cup water, boiling
  • 1 1/2 cups low-fat or fat-free cottage cheese
  • 1 (8-ounce) container reduced-fat cream cheese or Neufchâtel cheese, softened and chopped
  • 1 (8-ounce) container frozen light or fat-free whipped dessert topping, thawed
  • key limes or limes, optional, to taste, sliced, for topping

Directions

Step 1 –In a small bowl, combine the graham cracker crumbs, the butter, and the sugar.

Step 2 –Press the crumb mixture into the bottom of a 2-quart square baking dish.

Step 3 –Refrigerate the graham cracker crust while preparing the filling.

Step 4 –In large bowl, add the lime gelatin and the boiling water and stir until the gelatin is dissolved.

Step 5 –In blender or food processor, add the cottage cheese and the cream cheese, then cover and process until smooth, stopping several times to scrape down the sides.

Step 6 –Whisk 1/2 cup of the cottage cheese mixture into the gelatin mixture.

Step 7 –Whisk the remaining cottage cheese mixture into the gelatin mixture until smooth.

Step 8 –Fold the whipped dessert topping into the gelatin mixture.

Step 9 –Spoon the filling mixture over the chilled graham cracker crust.

Step 10 –Cover and chill the bars until the filling is firm, at least 8 hours and up to 24 hours.

Step 11 –Cut the bars into squares and top with the lime slices.

Step 12 –Serve.
