Ingredients
- 1 1/2 cups sugar
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 4 cups whole milk
- 4 large eggs, lightly beaten
- 2 pints heavy cream
- 3 tablespoons vanilla extract
Directions
Step 1 –In a large saucepan, combine the sugar, the flour, and the salt.
Step 2 –Gradually add the milk into the flour mixture until smooth.
Step 3 –Cook and stir the milk mixture over medium heat until thickened and bubbly.
Step 4 –Reduce the heat to low; cook and stir for 2 minutes longer.
Step 5 –Transfer the saucepan from the heat.
Step 6 –In a small bowl, whisk a small amount of the hot milk mixture into the eggs. The goal is to temper the eggs so they do not scramble when added to the hot milk mixture. Make sure you add the hot milk mixture slowly, so the eggs are gradually brought up in temperature.
Step 7 –Return the tempered egg mixture to the saucepan with the remaining hot milk mixture, whisking constantly.
Step 8 –Prepare a large pot filled with ice and water.
Step 9 –Bring the custard mixture to a gentle boil.
Step 10 –Cook and stir for 2 minutes.
Step 11 –Transfer the saucepan off the heat immediately.
Step 12 –Quickly transfer the custard mixture to a large heat-safe bowl.
Step 13 –Place the bowl in the prepared ice bath.
Step 14 –Gently and occasionally stir the custard mixture for 2 minutes.
Step 15 –Press plastic wrap directly onto the surface of the custard.
Step 16 –Refrigerate for at least 8 hours and up to overnight.
Step 17 –Stir the heavy cream and the vanilla into the custard.
Step 18 –Fill the cylinder of an ice cream freezer 2/3 full of the custard; freeze according to the manufacturer’s directions.
Step 19 –Refrigerate the remaining mixture until ready to freeze.
Step 20 –Repeat the process with the remaining mixture.
Step 21 –Transfer the ice cream to freezer containers, allowing headspace for expansion.
Step 22 –Freeze the ice cream for at least 2 hours or until firm.
Step 23 –Serve.
