Ingredients

  • 1 1/4 cups lukewarm water
  • 1 tablespoon plus 1 teaspoon granulated sugar, divided
  • 1 (0.25-ounce) packet active dry yeast
  • 5 cups all-purpose flour, plus more, to taste, for dusting the work surface
  • 2 teaspoons kosher salt
  • 1 cup mashed potatoes, store-bought or homemade
  • 6 tablespoons butter, softened, plus 2 tablespoons, melted, divided

Directions

Step 1 –In a small glass bowl, add the lukewarm water and 1 teaspoon of the sugar and stir to combine.

Step 2 –Sprinkle the yeast over the sugar-water mixture and let it sit, without stirring, until foamy, about 5 minutes.

Step 3 –Stir the yeast into the sugar-water mixture.

Step 4 –In the bowl of a stand mixer with the dough hook attached, add 5 cups of the flour, the remaining sugar, and the salt and stir to combine.

Step 5 –Add the yeast mixture and the mashed potatoes to the flour mixture and stir to combine.

Step 6 –With the mixer running, add 6 tablespoons of the softened butter, 1 tablespoon at a time, and mix until fully incorporated after each addition.

Step 7 –Continue to mix until a smooth dough forms, about 5 minutes.

Step 8 –Coat a large bowl with cooking spray.

Step 9 –Transfer the dough to the prepared bowl and cover it with a clean kitchen towel.

Step 10 –Let the dough rise until it doubles in size, about 1 hour.

Step 11 –Punch the dough down to deflate it.

Step 12 –Using the extra flour, lightly dust a work surface.

Step 13 –Turn the dough out onto the prepared surface.

Step 14 –Divide the dough into 12 equal pieces and roll each into a smooth ball.

Step 15 –Grease a 9×13-inch baking pan with cooking spray.

Step 16 –Place the balls in the prepared baking pan, about 1 inch apart.

Step 17 –Cover the dough balls and let them rise, about 45 minutes.

Step 18 –Preheat the oven to 400 degrees F.

Step 19 –Brush the tops of the dough with 1 tablespoon of the melted butter.

Step 20 –Bake until golden, about 25 minutes.

Step 21 –Brush the rolls with the remaining melted butter.

Step 22 –Serve.
