Ingredients

  • 3/4 pound ground beef
  • 1/2 cup refried beans
  • 1 (4-ounce) can chopped green chiles, drained
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 4 (8-inch) flour tortillas
  • 2 tablespoons butter, melted
  • 1 1/3 cups Mexican cheese blend, shredded
  • paprika, optional, to taste

Directions

Step 1 –Preheat the oven to 475 degrees F.

Step 2 –Lightly grease a baking sheet.

Step 3 –In a large skillet over medium heat, cook the beef, while crumbling the meat, until it is no longer pink, about 5-7 minutes.

Step 4 –Drain the fat from the skillet.

Step 5 –Stir the beans, the chiles, the oregano, the cumin, and the salt into the beef mixture and cook over medium-low heat until it is heated through, about 3-4 minutes.

Step 6 –Brush one side of the tortillas with the butter.

Step 7 –Spoon 1/2 cup of the beef mixture over 1/2 of the unbuttered side of the tortillas.

Step 8 –Sprinkle the meat with 1/3 cup of the cheese each.

Step 9 –Fold the tortillas in half and place them on the prepared baking sheet.

Step 10 –Sprinkle the tortillas with the paprika.

Step 11 –Bake the quesadillas until they are crisp and golden-brown, about 8-10 minutes.

Step 12 –Cut each quesadilla into wedges.

Step 13 –Serve hot.
