Ingredients
- 1/4 cup extra virgin olive oil
- 1 1/2 tablespoon fresh garlic, minced
- 7 Roma tomatoes, diced
- 1/4 cup parmesan cheese, finely shredded
- 1/4 cup basil leaves, julienned
- 1 tablespoon balsamic vinegar
- 3/4 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 (14.5 ounce) loaf French bread, sliced into 1/2-inch-thick slices and toasted
Directions
Step 1 -Heat the olive oil in a small skillet or saucepan over medium-low heat.
Step 2 -Add the garlic and sauté until it just starts to turn golden, about 1 minute.
Step 3 -Pour the garlic-oil into a large mixing bowl and allow it to cool.
Step 4 -Add the diced tomatoes into the bowl with the cooled garlic-oil mixture.
Step 5 -Add the parmesan, the basil, the balsamic vinegar, the salt, and the pepper. Toss the bruschetta mixture well.
