Easy Chicken Artichoke Bake, at its delicious core, is basically a spinach and artichoke dip turned into a casserole and baked with chicken.   • 4 chicken breasts, boneless and skinless
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt, divided
  • 1/2 teaspoon pepper, divided
  • 8 ounces mozzarella cheese, grated
  • 3 ounces parmesan cheese, freshly grated
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 teaspoons Dijon mustard
  • 1/4 onion, finely chopped
  • 4 cups fresh spinach, coarsely chopped
  • 1/2 can artichoke hearts, drained and diced

Step 1 –Position the rack in the center of the oven.

Step 2 –Preheat the oven to 375 degrees F.

Step 3 –Arrange the chicken breasts along the bottom of a large baking dish, taking care to lay each piece of chicken flat.

Step 4 –Sprinkle the chicken evenly with the garlic powder, 1/4 teaspoon of the salt, and 1/4 teaspoon of the pepper.

Step 5 –In a small mixing bowl, combine the mozzarella cheese and the parmesan cheese, reserving 1/3 of the mixture.

Step 6 –In a large bowl, add the mayonnaise, the sour cream, the Dijon mustard, the onion, the remaining salt, the remaining pepper, and the cheese mixture, mixing to combine.

Step 7 –Fold the spinach and the artichoke hearts into the mayonnaise mixture.

Step 8 –Spread the mayonnaise mixture evenly over the top of the chicken layer.

Step 9 –Sprinkle the mayonnaise mixture with the reserved cheese mixture.

Step 10 –Bake the chicken artichoke bake until a thermometer inserted into the center of the chicken reads at least 165 degrees F, about 30-40 minutes.
