- 8 ounces white button mushrooms, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 1/2 pounds chicken breast, boneless, skinless, and cut into strips
- 3/4 teaspoon kosher salt, more to taste
- 1/2 teaspoon black pepper, more to taste
- 1/4 cup low-sodium chicken broth
- 4 ounces plain cream cheese
- 1/2 cup mozzarella cheese, shredded

- 3 tablespoons fresh parsley, chopped
Directions
Step 1 –Heat a large skillet over medium heat on the stove-top.
Step 2 –Add the olive oil, and heat until shimmering.
Step 3 –Add the mushrooms and onions and sauté for 4-5 minutes.
Step 4 –Add the garlic and sauté for 30 seconds.
Step 5 –Season the chicken with the salt and pepper.
Step 6 –Increase the heat to medium-high, and add the seasoned chicken to the pan.
Step 7 –Sear the chicken until golden brown, about 6-8 minutes, turning them over once.
Step 8 –Add in the chicken broth and cream cheese, stirring until the cream cheese is melted fully and combined.
Step 9 –Sprinkle the mozzarella over the chicken.
Step 10 –Cover the pan with the lid, reduce the heat, and cook until the chicken is fully cooked, about 2-3 minutes. Use the salt and pepper to season to taste.
Step 11 –Serve the mushrooms and chicken over steamed rice garnished with the parsley.
