Ingredients
- 1 stick unsalted butter
- 1 1/2 cups yellow onion, chopped
- 1/4 cup flour
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 cups turkey drippings, plus chicken stock, to taste, defatted and heated
- 1 tablespoon Cognac or brandy
- 1 tablespoon white wine, optional
- 1 tablespoon heavy cream, optional
Directions
Step 1 -In a large sauté pan, cook the butter and the onions over medium-low heat until the onions are lightly browned, about 12-15 minutes. Make sure the onions are fully cooked before you move on.
Step 2 -Sprinkle the flour into the pan and whisk it thoroughly until it becomes foamy, about 2 minutes.
Step 3 -Add the salt and the pepper and cook for 2-3 minutes.
Step 4 -Add the warm turkey dripping-stock mixture and the Cognac, and cook uncovered until thickened, about 4-5 minutes.
Step 5 -Add the wine and the cream, stirring to combine.
Step 6 -Serve.
