Ingredients
- 1 pound lean ground beef
- 1 medium green bell pepper, diced
- 1 medium tomato, chopped
- 4 tablespoons Worcestershire sauce
- 1 (28-ounce) can diced tomatoes, undrained
- 1 tablespoon onion, minced
- 1 teaspoon garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- salt, to taste
- ground black pepper, to taste
- 2 cups rice, cooked
- 1/2 cup cheddar cheese, shredded
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Grease a 9×13-inch baking dish.
Step 3 –In a large skillet over medium-high heat, cook the beef, while crumbling, until it is no longer pink, about 5-7 minutes.
Step 4 –Add the bell pepper, the chopped tomato, and the Worcestershire sauce to the beef and cook, while stirring, until the pepper has slightly softened, about 5 minutes.
Step 5 –Strain 1/2 of the liquid from the diced tomatoes into the beef mixture, discarding the rest of the liquid.
Step 6 –Stir the diced tomatoes, the onion, the garlic, the oregano, the basil, the salt, and the pepper into the beef mixture and simmer until some of the liquid reduces, about 10 minutes.
Step 7 –Add the cooked rice to the beef mixture and stir well.
Step 8 –Pour the beef mixture into the prepared baking dish and sprinkle with the shredded cheese.
Step 9 –Bake the beef bake until the filling is heated through and the cheese has melted, about 45 minutes.
