Ingredients

  • 6 cups tiny pretzel twists
  • 1/4 cup honey mustard sauce, plus more for serving
  • 2 large eggs
  • 1 1/4 pounds of chicken breasts, boneless, skinless, and cut into bite-sized pieces
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup all-purpose flour

Directions

Step 1 –Preheat the oven to 425 degrees F.

Step 2 –Generously grease two rimmed baking sheets with cooking spray.

Step 3 –In a large resealable plastic bag, crush the pretzels with the back of a wooden spoon or a rolling pin until the mixture is coarsely ground. Transfer the ground pretzels to a shallow bowl.

Step 4 –In a separate shallow bowl, whisk together the honey mustard sauce and eggs.

Step 5 –In a medium bowl, season the chicken with salt and pepper.

Step 6 –Toss the chicken with flour until evenly coated.

Step 7 –Dip each chicken piece in the honey mustard mixture, letting the excess drip off.

Step 8 –Roll each coated chicken piece in the pretzel crumbs, pressing it down to adhere.

Step 9 –Transfer the pretzel-coated chicken to the baking sheets in a single layer.

Step 10 –Spray the chicken with cooking spray.

Step 11 –Bake, turning halfway through until the chicken is cooked through and the coating is golden, for about 12-15 minutes.

Step 12 –Serve the chicken with more honey mustard sauce.
