Ingredients
- 2 tablespoons extra-virgin olive oil, plus more as needed
- 1 1/2 pounds chicken thighs, skinless and boneless
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 2 cups heirloom cherry tomatoes, sliced in half lengthwise
- 4 cups baby spinach
- 1/4 cup basil, chopped
- 2 tablespoons parmesan cheese, shredded, plus more to taste
- salt, to taste
- ground black pepper, to taste
Directions
Step 1 –In a large skillet over medium-high heat on the stove-top, heat the olive oil.
Step 2 –Add the chicken and cook until it’s just starting to be cooked through and is browned on both sides, about 4-5 minutes. Set the chicken aside.
Step 3 –Add the onion and cook for 3-4 minutes.
Step 4 –Add the garlic and cook until it is fragrant and the onion in the skillet is tender and slightly golden-brown, for about 1-2 minutes.
Step 5 –Return the chicken to the skillet.
Step 6 –Add the tomatoes and cook for 2-3 minutes.
Step 7 –Add the basil and spinach and cook until the spinach is wilted, for about 2-3 minutes.
Step 8 –Using a meat thermometer, check that the thickest part of the chicken reads 165 degrees F. If not, continue sautéing until fully cooked through.
Step 9 –Stir in the parmesan and season with salt and pepper.
Step 10 –Serve hot.
