Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup quick oats
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups buttermilk
  • 2 large eggs
  • 1/4 cup salted butter, melted, plus more, to taste, room temperature and sliced, for serving
  • maple syrup, to taste, for serving

Directions

Step 1 –Preheat a flat griddle over medium-high heat.

Step 2 –In a large mixing bowl, add the flour, the oats, the sugar, the baking powder, the baking soda, and the salt and stir to combine.

Step 3 –Whisk the buttermilk, the eggs, and 1/4 cup of the melted butter into the flour mixture until it is just combined.

Step 4 –Pour the pancake batter, in batches, onto the griddle and cook until bubbles form.

Step 5 –Flip the pancakes and cook until the other sides are golden-brown.

Step 6 –Serve the pancakes hot, topped with the extra butter slices and the maple syrup.
