Ingredients
- 2 pounds chicken breasts, boneless and skinless, cut into 1-inch cubes
- 1/3 cup plain Greek yogurt
- 1/2 teaspoon ground coriander, optional
- kosher salt
- freshly ground black pepper
- 1 onion, chopped
- 5 cloves garlic, minced
- 1 tablespoon freshly minced ginger
- 1/2 teaspoon ground turmeric
- 2 teaspoons ground cumin
- 2 teaspoons paprika
- 2 teaspoons garam masala
- 1/2 teaspoon cayenne pepper
- 1 (28-ounce) can crushed tomatoes
- 1/2 cup heavy cream
- kosher salt
- fresh cilantro, to taste, chopped, for garnish
- rice, optional, to taste, cooked and warm, for serving
Directions
Step 1 –In a slow cooker, combine the chicken pieces , the yogurt, the ground coriander, the salt, and the pepper.
Step 2 –Let the chicken mixture marinate for 15-20 minutes.
Step 3 –Add the onions, the garlic, the ginger, the turmeric, the cumin, the paprika, the garam masala, and the cayenne pepper.
Step 4 –Add the tomatoes and their juices and stir to combine.
Step 5 –Place the lid on the slow cooker and cook for 4 hours on high or 8 hours on low. Insert a meat thermometer into the chicken pieces to ensure they reach 165 degrees F.
Step 6 –Turn off the slow cooker, stir in the heavy cream, and then garnish with the fresh cilantro.
Step 7 –Serve over the rice.
