For the pork chops:

  • 4 (8-ounce) pork chops, bone-in, pounded to 3/4-1-inch-thickness
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 2 tablespoons unsalted butter

For the glaze:

  • 1/4 cup balsamic vinegar
  • 3 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • crushed red pepper flakes, to taste, optional
  • kosher salt, to taste
  • freshly ground black pepper, to taste


Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Season the pork chops with the salt and pepper.

Step 3 –Melt the butter in a large oven-safe skillet over medium-high heat.

Step 4 –Add the pork chops to the butter and sear them on both sides until they are golden-brown, about 2-3 minutes.

Step 5 –Place the skillet in the oven and roast until the pork chops are cooked through and reach an internal temperature of 140 degrees F, about 8-10 minutes.

Step 6 –Combine the balsamic vinegar, the honey, the garlic, the oregano, the basil, the thyme, the red pepper flakes, the salt, and the pepper in a small saucepan over medium heat and bring to a boil.
