Eggnog Pancakes

Just swap out your regular go-to pancakes for these fluffy, warm hotcakes infused with flavors of your favorite festive drink: warm cinnamon, nutty nutmeg, and lots of creamy eggnog, of course! Drizzle Eggnog Pancakes with your favorite sugary syrup and you’ll be decking the halls and then some!

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 2 tablespoons granulated sugar
  • 1 1/4 cups eggnog
  • 1 egg
  • 3 tablespoons butter, melted
  • room temperature butter, to taste, for cooking

Directions

Step 1 –In a large bowl, whisk together the flour, the baking powder, the salt, the nutmeg, the cinnamon, and the sugar.

Step 2 –Make a well in the center of the flour mixture and pour the eggnog, the egg, and the melted butter into it.

Step 3 –Use an electric mixer to combine the batter until smooth.

Step 4 –Heat a griddle or frying pan over medium heat and add the remaining butter, as needed, for cooking.

Step 5 –Using a ladle, pour 1/4 cup of the batter onto the griddle for each pancake.

Step 6 –Cook until the pancakes are bubbly and then flip them over.

Step 7 –Cook until golden-brown and steam is no longer rising from the pancake, about 1 minute. Repeat until all the batter has been used.

Step 8 –Serve immediately.
