Ingredients

  • 1 pound ground beef
  • 1 can (10 ounces) enchilada sauce
  • 1 cup salsa
  • 6 (10 inch) flour tortillas
  • 2 cups corn, fresh or frozen
  • 4 cups cheddar cheese, shredded

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In a large skillet over medium heat, cook the beef until no longer pink, then drain.

Step 3 –Add the enchilada sauce and salsa to the skillet, then set aside.

Step 4 –Grease a 9×13 inch baking dish.

Step 5 –Place 2 tortillas at the bottom (it’s ok if they overlap).

Step 6 –Take 1/3 of the beef mixture and spread it over the tortillas.

Step 7 –Add 1 cup of corn.

Step 8 –Sprinkle the top with cheese.

Step 9 –Repeat this process of layering until all of the ingredients are used.

Step 10 –Bake uncovered until the cheese is bubbly, for 30 minutes.
