All you need are some rosy and perfectly seasoned salmon fillets. And then all you have to do is pile them high with sweet, sun-dried tomatoes, earthy artichoke hearts, tangy capers, and fresh spinach. After such a wholesome, heart-healthy feast, you’ll feel like nothing can stop you! This Energy Salmon is just that powerful. Who knows what you’ll be capable of!

Ingredients
For the salmon:
- 1 tablespoon olive oil
- 4 (4-ounce) salmon fillets
- 1/4 teaspoon salt
For the veggies:
- 3 cloves garlic, minced
- 1/4 cup sun-dried tomatoes, chopped
- 1 cup artichoke hearts, chopped
- 2 tablespoons capers, drained
- 6 ounces fresh spinach
- salt, to taste

Directions
Step 1 –In a large skillet over medium-high heat, heat the oil.
Step 2 –Season the salmon fillets evenly with 1/4 teaspoon of the salt.
Step 3 –Add the fillets, flesh-side down, to the hot oil and sear for 4 minutes.
Step 4 –Reduce the heat to medium and flip the fillets.
Step 5 –Sear the fillets until they reach an internal temperature of at least 145 degrees F, about 4-5 minutes.
Step 6 –Transfer the fillets to a plate.
Step 7 –In the same skillet, add the garlic, the sun-dried tomatoes, the artichokes, the capers and cook, while stirring, for 1 minute.
Step 8 –Add the spinach to the veggie mixture and cook, while stirring, until it wilts, about 2-3 minutes.
Step 9 –Season the veggie mixture with the extra salt.
Step 10 –Plate the fillets and top with the veggie mixture.
Step 11 –Serve.
